We\u2019ve gathered campervan dinner recipes from former Escapees who blazed the trail in years past to get you started on your own campervan cooking ventures. Cowboy Chili<\/h2>\n

1 lb ground beef (or ground turkey)<\/p>\n

1 onion<\/p>\n

1 can Mexican flavored stewed tomatoes<\/p>\n

1 can beans (kidney or black)<\/p>\n

1-2 cans of condensed tomato soup<\/p>\n

2-3 tsp chili powder<\/p>\n

1 tsp cumin<\/p>\n

    \n
  1. Brown ground meat with chopped onions.<\/li>\n
  2. Add all other ingredients.<\/li>\n
  3. Bring to a boil, cover, and let simmer for 10 minutes.<\/li>\n
  4. Serve!<\/li>\n<\/ol>\n

    One Pot Egg Fried Rice<\/h2>\n

    1 tablespoon of butter or oil<\/p>\n

    1 small onion, finely chopped<\/p>\n

    1\/2 red pepper, finely chopped<\/p>\n

    2 cloves garlic, finely chopped<\/p>\n

    1 pouch microwavable rice<\/p>\n

    1\/2 teaspoon turmeric<\/p>\n

    Pinch salt<\/p>\n

    1\/2 teaspoon sugar<\/p>\n

    1\/2 teaspoon black pepper<\/p>\n

    1\/2 teaspoon paprika<\/p>\n

    Chilli flakes to taste<\/p>\n

    3 eggs<\/p>\n

    Soy sauce & sweet chili sauce to serve<\/p>\n

    1. Heat the fat and fry the onion until softened.<\/li>\n
    2. Add the pepper and garlic and cook for a couple of minutes.<\/li>\n
    3. Add the rice and spices and stir well.<\/li>\n
    4. Push the rice to the sides of the pan and crack in the eggs. Scramble them and then stir through the rice, mixing well.<\/li>\n
    5. Serve with soy and sweet chili sauce. Enough for 2 people.<\/li>\n<\/ol>\n

      Cream of Chicken and Rice<\/h2>\n

      2-3 chicken breasts<\/p>\n

      1 can Campbell\u2019s Cream of Chicken soup<\/p>\n

      1 1\/4 cups Minute Rice<\/p>\n

      Salt\/pepper to taste<\/p>\n

        \n
      1. Add can of soup, one can of water, and the chicken.<\/li>\n
      2. Stir while heating to a boil.<\/li>\n
      3. Boil 5 minutes.<\/li>\n
      4. Add the Minute Rice and stir.<\/li>\n
      5. Cover and let it sit for 10 minutes.<\/li>\n
      6. Uncover, stir and serve.<\/li>\n<\/ol>\n

        Campfire Nachos<\/h2>\n

        1 pound ground beef<\/p>\n

        1 can (14-1\/2 ounces) diced tomatoes, undrained<\/p>\n

        1 cup fresh or frozen corn, thawed<\/p>\n

        3\/4 cup uncooked instant rice<\/p>\n

        1\/2 cup water<\/p>\n

        1 envelope taco seasoning<\/p>\n

        1\/2 teaspoon salt<\/p>\n

        1 cup shredded Colby-Monterey Jack cheese<\/p>\n

        1 package (16 ounces) tortilla chips<\/p>\n

        Optional toppings: sour cream, sliced fresh jalapenos, shredded lettuce, lime wedges<\/p>\n

        1. In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain.<\/li>\n
        2. Stir in tomatoes, corn, rice, water, taco seasoning, and salt. Bring to a boil. Reduce heat; simmer, covered, 8-10 minutes until rice is tender and mixture is slightly thickened.<\/li>\n
        3. Remove from heat; sprinkle with cheese. Let stand, covered, 5 minutes or until cheese is melted.<\/li>\n
        4. Divide tortilla chips among six plates; spoon beef mixture over chips. Serve with toppings as desired. Yield: 6 servings.<\/li>\n<\/ol>\n

          Chicken and Dumplings<\/h2>\n

          3 chicken breasts, diced<\/p>\n

          1\/2 stick butter<\/p>\n

          1 can cream of chicken soup<\/p>\n

          2 cans chicken broth<\/p>\n

          8 flour tortillas<\/p>\n

          Salt\/pepper to taste<\/p>\n

          1. Bring broth and seasonings to boil.<\/li>\n
          2. Meanwhile, slice tortillas into thin strips.<\/li>\n
          3. Place in the boiling broth and cook for about 15 minutes.<\/li>\n
          4. Add chicken pieces and cook for 15 more minutes uncovered.<\/li>\n<\/ol>\n

            Mac and Cheese<\/h2>\n

            1 package macaroni noodles<\/p>\n

            1\/2 cup whole milk<\/p>\n

            2 cups grated cheddar cheese<\/p>\n

            1\/2 cup diced ham<\/p>\n

            1\/4 cup parmesan cheese<\/p>\n

            1\/4 cup Italian breadcrumbs<\/p>\n

            Salt\/pepper to taste<\/p>\n

            1. Cook macaroni until tender in a pot of boiling salted water.<\/li>\n
            2. Drain water and return macaroni to pot.<\/li>\n
            3. Add grated cheeses, milk, and ham.<\/li>\n
            4. Stir for a few minutes over medium heat until cheese melts.<\/li>\n
            5. Pour into serving dish and sprinkle top with the parmesan and breadcrumbs.<\/li>\n<\/ol>\n

              Bowls<\/h2>\n

              Quinoa<\/p>\n

              Black beans<\/p>\n

              Veggies (bell peppers, onion, corn, sweet potato\u2013depending on the season)<\/p>\n

              Avocado<\/p>\n

              Cilantro<\/p>\n

              Bowls are an easy and versatile way to cook up a quick, delicious meal. Heat up some quinoa and black beans, saute some meat and\/or veggies, and add spices to taste. Voila!<\/p>\n

              Sloppy Joes<\/h2>\n

              1 lb ground beef or turkey<\/p>\n

              Onion, diced<\/p>\n

              1\/8 cup mustard<\/p>\n

              3\/4 cup ketchup<\/p>\n

              2 heaping Tbsp. brown sugar<\/p>\n

              Cheddar cheese, sliced<\/p>\n

              1. Cook the ground beef or turkey, drain some of the juices off, and then add the onion, mustard, ketchup, and brown sugar.<\/li>\n
              2. If you like it a bit tangier then add more mustard; to make it sweeter, add more sugar. Allow to simmer a bit to soak up all the juices.<\/li>\n
              3. Spoon onto hamburger buns and add sliced cheese if desired. Serve.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n
