Recipe: How to cook pizza in a campervan

Who doesn’t love pizza? I mean – it’s delicious, easy, adaptable and can be pretty healthy if you make it yourself with lots of good bits. I love a good culinary challenge. So I tasked myself with cooking pizza in a campervan kitchen while primitive camping in Escalante, Utah last month with Escape campervans. The key to this recipe is getting the pan nice and hot with a heat ‘seal’ aka aluminum foil before cooking.
Feeds 2 – 3 people.
Pizza ingredients
Large flour wraps or tortillas x 4
1 large vine tomato, diced
3 cloves garlic, finely chopped
1 small can tomato paste
Fresh basil chopped
Salt and pepper to taste
Pizza toppings
Get creative! Some of my favourites are feta, fresh mozzarella, cured salami, canned artichokes, sun-dried tomatoes, arugula, and fresh basil.
To make pizza sauce:
In a small saucepan mix ingredients and simmer until thick and fragrant. This will reduce and become more saucey after about 10 minutes.
Add some olive oil to a large frypan, and cover with an aluminum foil ‘lid.’
Heat until oil begins to sizzle.
Meanwhile spread a wrap with 1/4 of the sauce, then layer with your cheese and other toppings. Place in a frypan and cover well to seal in the heat. Cook for 8-10 mins until crispy and cheese is melted. Remove and top with arugula, a drizzle of olive oil and basil.
